As Senior Sous Chef you will support your Head Chef in leading one of the kitchens at The Ned, taking the reins whenever the Head Chef is not present. What’s the role?Senior Sous Chef Where will you be working?The Ned and Ned’s Club are a global collection of hotels, clubs, spas, and restaurants for like-minded individuals to meet, work and have a good time. The Ned launched in 2017 in the heart of the City, in the former Midland Bank headquarters. The Ned City of London houses Ned’s Club - a private members’ space, gym and rooftop - alongside a public spa, a full floor of events spaces, ten restaurants and bars and 250 hotel bedrooms. At The Ned, we have restaurants in almost every cuisine, from pan-Asian to American diner, and Italian to fine dining. As the second in command in the kitchen leadership team, reporting into your Head Chef you will:<ul><li>Be working with the Head Chef to lead the team in the production of our food, compiling the daily mise-en-place, and ensuring that all food is cooked and presented to our exceptional Ned standards</li><li>Lead our kitchen operations whenever the Head Chef is not on duty, deputising and handling the day-to-day</li><li>Support with all people leadership tasks - including team recruitment, development and performance chats, onboarding new starters - this is a great role for an aspiring Head Chef who wants to build their people management skillset</li><li>Be a guardian of food quality and presentation, monitoring all food leaving your kitchen and providing coaching and feedback to the team where needed</li><li>Create and monitor a safe and clean kitchen environment, protecting our guests and team from any possible harm</li><li>Protect our excellent food safety ratings and audit standards by always keeping a close eye on procedures and practices, keeping impeccable records, and implementing action plans where necessary</li><li>A mainstay of our kitchen team, you’ll be preparing all meat, fish, poultry, and vegetables</li></ul> What you can bring to the role:<ul><li>Previous kitchen leadership experience with a proven track record of delivering outstanding food and people management</li><li>Our customers and guests expect the best, so high standards are essential</li><li>An organised and detailed manner is necessary, as impeccable record keeping is needed to maintain records for our safety and audit standards</li><li>A commercial mindset is needed in all our leaders.
