As Senior Sous Chef you will support your Head Chef in leading our Millie&#39;s kitchen at The Ned, taking the reins whenever the Head Chef is not present. What’s the role?Senior Sous Chef Where will you be working?The Ned and Ned’s Club are a global collection of hotels, clubs, spas, and restaurants for like-minded individuals to meet, work and have a good time. The Ned launched in 2017 in the heart of the City, in the former Midland Bank headquarters. The Ned City of London houses Ned’s Club - a private members’ space, gym and rooftop - alongside a public spa, a full floor of events spaces, ten restaurants and bars and 250 hotel bedrooms. At The Ned, we have restaurants in almost every cuisine, from pan-Asian to American diner, and Italian to fine dining. As the second in command in the kitchen leadership team, reporting into your Head Chef you will:<ul><li>Be working with the Head Chef to lead the team in the production of our food, compiling the daily mise-en-place, and ensuring that all food is cooked and presented to our exceptional Ned standards</li><li>Lead our kitchen operations whenever the Head Chef is not on duty, deputising and handling the day-to-day</li><li>Support with all people leadership tasks - including team recruitment, development and performance chats, onboarding new starters - this is a great role for an aspiring Head Chef who wants to build their people management skillset</li><li>Be a guardian of food quality and presentation, monitoring all food leaving your kitchen and providing coaching and feedback to the team where needed</li><li>Create and monitor a safe and clean kitchen environment, protecting our guests and team from any possible harm</li><li>Protect our excellent food safety ratings and audit standards by always keeping a close eye on procedures and practices, keeping impeccable records, and implementing action plans where necessary</li><li>A mainstay of our kitchen team, you’ll be preparing all meat, fish, poultry, and vegetables</li></ul> What you can bring to the role:<ul><li>Previous kitchen leadership experience with a proven track record of delivering outstanding food and people management</li><li>Our customers and guests expect the best, so high standards are essential</li><li>An organised and detailed manner is necessary, as impeccable record keeping is needed to maintain records for our safety and audit standards</li><li>A commercial mindset is needed in all our leaders.
